Salade Niçoise – a great French recipe with tuna and anchovies

Ingredients
- 160 g canned tuna
- 6 eggs
- 12 anchovies small & canned
- 1 lettuce
- 200 g green beans
- 1 shallot
- 4 tomatoes
- 4 potatoes
- 100 g black olives we prefer the Greek Kalamata olives
- 3 tsp capers
- 1 tsp mustard
- 2 tbsp white wine vinegar or white balsamico
- 1 tsp lemon
- 1 clove garlic
- 6 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Instructions
- Heat water in a large sauce pan.
- Press the garlic finely and chop the shallot. Halve the potatoes.
- Now prepare the dressing by adding olive oil to a bowl. Also add the garlic, white wine vinegar, pepper and salt, lemon juice and mustard and mix well.
- Cook the potatoes in the hot sauce pan and add after 10 minutes the green beans. Continue to heat for another 5 minutes. Afterwards also cook the eggs for another 7 minutes.
- Add tuna to the dressing and mix until you get a smooth creamy dressing.
- Cut the tomatoes in quarters and tear the lettuce leaves.
- Take a large wide bowl and add the lettuce, tomatoes, green beans and potatoes.
- Now serve the salade niçoise composed of the salad bowl, the creamy tuna dressing, the halved eggs, anchovies, capers, black olives and shallots.
